Culinary Moment-E-Form Signature Recipes



Eric's Special Spicy Rice

2 Med Roma tomatoes
1/2 Med Yellow Onion 
2 Jalapeño Peppers
1 1/2c Long Grain Brown Rice
1 Tbsp Chilli Powder
1 tsp Sea Salt
1Tbsp Extra Virgin Olive Oil
2c Water

Chop Tomatoes, Onions, and Jalapeño to medium size pieces. Sauté vegetables in oil olive on medium heat. Add 1/2 tsp sea salt and long grain brown rice to 2 cups of boiling water. Stir and simmer until rice is firm and done. Drain rice. Add cooked rice, Chili Powder, and remaining Sea Salt to vegetable mixture. Sauté on medium heat for 5 minutes. Slice remaining Jalapeño pepper in half and place on grill for 5 minutes. Serve rice mixture in a casserole dish with grilled Jalapeño garnish. The garnish can be serve fresh

Serves 8



Spicy Barbecue Salmon Patties

1c Canned Deming's Red Sockeye Salmon or grilled flaked Salmon
1 medium egg
1/4c Medium Chopped Yellow Onions
1 Jalapeño finely chopped
I Garlic Clove finely chopped
1 Tbsp Cholula Hot Sauce
1 tsp Sea Salt
1 tsp Chilli Powder
1c Almond Flour
1c Extra Virgin Olive Oil
1c Barbecue Sauce

Mix Red Sockeye Salmon, egg, vegetables, hot sauce, and seasonings in bowl. Form 1 1/2 inch balls and flatten to 1/2 inch patties. Lightly coat each patty with almond flour. Add patties to hot olive oil in skillet. Fry until medium brown on each side. Remove and add to hot grill. Lightly brush barbecue sauce on each patty and grill for 3 minutes on both sides. Remove from grill and serve hot with Eric's Spicy Rice.

The 50th Annual Pasadena Showcase House

The 50th Annual Pasadena Showcase House of Design event is running though May 11th. This year's feature is a beautiful English Country house in the South Grand-Covington section designed by famous artichect, Stiles O. Clements-famous for such buildings as: the El Capitan Theatre, Wiltern Theatre, and the Mayan Theatre in Los Angeles. The seven bed-ten bath home sits on 3.5 wooded acres and features a terraced rose garden, pool, bathhouse, river rock spring house, tennis and badminton courts, a greenhouse, gardener's potting shed and pond, and coach house. Each room was gutted, re-built, re-modeled, and designed by local architects and interior designers showcasing their unique styles of contemporary home furnishings and designs.
